Apartamento Cookbook #8: Tuber or Not Tuber

Apartamento Magazine is a Barcelona-based publication dedicated to interior design. Each year they publish a slender, themed cookbook which features recipes from interesting figures in the international worlds of cooking, art, design, and fashion.

How, the editors of Apartamento asked themselves, could they have overlooked tubers in their previous cookbooks? An error that cried out for rectification, but also raised the question, what is or isn’t a tuber?

Sixteen recipes and notes from various insightful people strive to shed some light. Among them:

• Corey Lee of Benu prepares goguma, a Korean sweet potato

• Food historian Sally Grainger offers duck with turnips in her own translation from Apicius

• Beekeepr Nic Dowie proffers fermented garlic honey (we’d say garlic is not a tuber)

• Thalia Barrios Garcia serves a red broth with potatoes from Oaxaca
